Peach Chia Pudding Bowl

Creamy, low carb, and rich in protein and fiber, this chia seed pudding is the perfect alternative for a bowl of oatmeal. Enjoy as a meal prep breakfast option throughout the week, or even enjoy as a healthy dessert or snack option.

Yields 4 Servings | Total Time 20 Minutes

Ingredients (Chia Pudding)

  • 1/2 cup chia seeds

  • 1/2 cup full-fat or light coconut milk

  • 3 cups spring or filtered water

  • 1 tsp vanilla extract

  • Pinch sea salt

  • Optional: 1 tbsp pure maple syrup

Ingredients (Other)

  • 2 organic peaches - finely chopped

  • 1/2 cup walnuts

  • 1/4 cup almond butter

  • 1 tsp cinnamon

Preparation

  1. In a large bowl, add all of the chia pudding ingredients and mix until well combined. Over the next five minutes, mix to combine two more times to prevent the chia seeds from clumping. Set sit for 15 minutes to thicken.

  2. Transfer the pudding to your desired bowls and garnish with the remaining ingredients.

  3. If meal prepping, store extras in the fridge for up to 5 days.
