Berry Chia Seed Compote

This homemade berry compote serves as the perfect healthy alternative to any of your favorite jams and preserves! Top on pancakes, yogurt bowls, chia seed parfaits, toast, or even use as a replacement in peanut butter and jelly sandwiches! The options are endless!

Ingredients

  • 2 cups berries (fresh or frozen) - I find that the small (10oz) bags of frozen berries sold at any grocery store work well for this!

  • ΒΌ cup water

  • 2 Β½ tbsp chia seeds

  • 1-2 tbsp your choice of sweetener (maple syrup, monkfruitt sweetener, raw honey, etc.)

  • 1 tbsp lemon juice

  • Pinch sea salt

Preparation

  1. Place a small pot on medium-low heat and add the berries and water. Cook until the fruit begins to break down and become jam like, 5-7 minutes. 

  2. Add in the remaining ingredients and simmer for an additional 1-2 minutes. 

  3. Remove from heat and let cool for 15min before transferring to an airtight container.

  4. Store in the fridge for up to 2 weeks.
